Well...my sister in law (coincidentally also a Krista but with a Ch) had just sent me a link to the show DC Cupcakes <a href="http://tlc.discovery.com/tv/dc-cupcakes/">http://tlc.discovery.com/tv/dc-cupcakes/</a> which I had spent sometime (probably too much) poking through and remembered their recipe for Three Minute Ganache <a href="http://tlc.discovery.com/videos/dc-cupcakes-three-minute-ganache.html">http://tlc.discovery.com/videos/dc-cupcakes-three-minute-ganache.html</a> which reminded me very much of the beginnings to a chocolate fondue that I make and share with Krista and her husband for our annual Christmas dinner...my cupcakista joo-joo is totally working for me right now.<br />

So I hollowed out the center of the cupcake using an apple corer (what a great trick...learned that from DC Cupcakes as well!) but before I did that I put them in the freezer for a little while to make for a nice clean cut, which worked great and I know because I didn't work fast enough so by the time I got to the last few it was more fragile and messier.<br />

<a name='more'></a>I allowed the ganache to cool in order to reach a consistency similar to a pudding and filled each cupcake. For the die hard chocolate lover I topped half of the cupcakes with more ganache and finished it off with a fresh raspberry. I know there are some of you that would argue there is no such thing but even as a chocolate lover myself I was concerned that would be too much chocolate so I topped the other half with buttercream frosting and a raspberry. I think both came out equally delicious and beautiful it's just a matter of how much of a chocolate fan you are! The true test however was what the birthday girl thought...did I deliver for a true chocolate fanatic??? I am happy to report she liked both but the chocolate cupcake with the ganache on top was her favorite! Happy Birthday Krista!<br />

I kept it traditional and topped the chocolate cupcake with a buttercream frosting, the same recipe I used for the 4th of July cupcakes (see previous post for the recipe)...it's become a new staple of mine and had a good time with decorating them. I mixed 2 different color green sprinkles together and dipped the cupcakes, added a golf flag (I don't know the technical term for them), little mini mint as the ball and VOILA Azn Mamma's 70th birthday cupcakes...to 70 more!!</div><div><br />

So I had to honor my second favorite holiday with an appropriate cupcake however I had one stipulation...they had to be quick and easy so I didn't miss out on the tubing, cook outs and baseball game. I have to thank my friend Marisa for coming up with the perfect idea...red, white and blue cupcakes made from a white cake mix. Whisk together boiling water and cocoa. Cover and set aside. With a mixer, cream together the butter, sugar, salt and vanilla extract. Place a rack in the center of the oven and preheat the oven to 350 degrees F. Line 24 cupcake cups with paper liners. Set the pans aside.<br /><br />2. Place the cake mix, pudding mix, milk, oil, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed. The batter should look well blended. Spoon or scoop a heaping 1/4 cup batter into each lined cupcake cup, filling it two thirds of the way full. (You will get between 22 and 24 cupcakes; remove the empty liners, if any.) Cut the frozen dough pieces in half to make 24 pieces. Place a frozen cookie dough piece on top of each cupcake. Place the pans in the oven.<br /><br />3. Bake the cupcakes until they are golden and spring back when lightly pressed with your finger, 23 to 27 minutes. Remove the pans from the oven and place them on wire racks to cool for 5 minutes. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingertips. Place them on a wire rack to cool for 15 minutes before frosting. They may sink a bit in the center.<br /><br />4. Meanwhile, prepare the Chocolate Buttercream.<br /><br />5. Place a heaping tablespoon of frosting on each cupcake and swirl to spread it out with a short metal spatula or a spoon, taking care to cover the tops completely. The cupcakes are ready to serve.<br /><br />Store these cupcakes, in a cake saver or under a glass dome, at room temperature for up to 3 days or in the refrigerator for up to 1 week. Or freeze them, wrapped in aluminum foil or in a cake saver, for up to 6 months. Thaw the cupcakes overnight in the refrigerator before serving.<br /><br />If you use the 18-ounce logs of refrigerated chocolate chip cookie dough (instead of the 1-pound packages of frozen dough), cut them into 24 equal pieces and freeze them before using them in this recipe. It's important to use frozen dough, because you don't want it to bake completely and become a cookie. You want the center to be gooey when you bite into it.<br /><br />Chocolate Buttercream<br />Makes 3 cups, enough to frost 24 cupcakes (2 1/2-inch size) generously<br />Preparation time: 10 minutes<br /><br />8 tablespoons (1 stick) butter, at room temperature<br />1/2 cup unsweetened cocoa powder<br />3 cups confectioners' sugar, sifted<br />3 to 5 tablespoons milk<br />1 teaspoon pure vanilla extract<br /><br />Place the butter and cocoa powder in a large mixing bowl. Allow the chocolate to cool a little bit and use a paint brush to coat the inside of a cupcake liner (there is enough for about 12 cupcakes). Let the chocolate harden. Tear off the cupcake liner and fill with ice cream, pick your favorite flavor. Garnish with topping of choice.
